My Favorite Easy Meals for One

If you live by yourself or even just enjoy cooking for only yourself, these meals are super simple to prepare. Shopping for a single meal can be challenging if you aren't the meal prep type. Personally, I don't mind having a meal's worth of leftovers to make the next day a little more efficient. However, it would be completely possible to buy these ingredients in slightly smaller portions if you shop around at your local grocery store. With that in mind, here are two of my favorite meals recently!

Pork Chops & Green Beans


  • Cook the pork chops in a pan with a little bit of olive oil. Season with your seasoning of choice, mine is Morton's Season-All Salt. Cook each side for about 3-5 minutes per side, depending on thickness (if you get thinly sliced, start at 2 minutes per side). Remove from pan and blot with a paper towel to remove any excess oil.
  • Meanwhile, microwave the green beans according to package instructions. Mine recommended 3-4 minutes, so I started with 3 minutes. Then, I opened the bag from the front end by making a slit down the middle, but still leaving the bag intact. Add a small amount of butter and salt and pepper to taste. Microwave for an extra 30 seconds, stir, and serve with the pork!
  • Sit down, relax, and enjoy! Plus, you only have to wash one pan... win-win.
Don't want to make all of your pork or green beans at once? No problem! Pork chops can be frozen is a freezer bag for up to six months. So, enjoy one, two, or all of them at a time. Plus, the green beans can be portioned into a microwave-safe container, covered with cling wrap (leave a corner open to vent), and prepared the same way. 

Broccoli Cheese Chicken & Oven Roasted Cauliflower


  • Preheat the oven to 375° and place an individually-wrapped frozen chicken breast on a baking sheet covered in foil. (Don't let the fact that these are frozen fool you... they're delicious!)
  • On the other side of the baking sheet, evenly spread out your cauliflower. Drizzle a light amount of olive oil and season with salt and pepper.
  • Bake for 35 minutes, plate, and enjoy!
Don't like cauliflower? This recipe would also work great with broccoli, large carrots, or a veggie mix!

Hungry for more?

Bread rolls are a super simple add-on to any meal! My favorite are Sister Schubert's Dinner Rolls. They bake within 5 or 6 minutes using a toaster oven and come in a convenient resealable bag. Just spread some butter on top of the roll, bake, and add to your plate!
