Music Monday: COIN is a band!

COIN is a band ! (At least according to the hat I bought my boyfriend when we saw COIN at Stubb's Creek Amphitheater last August.) I've seen COIN twice and been blown away not once... but twice. My one and only brush with fame was running into 2/3 of COIN in the music venue Emo's parking lot before I saw them in concert the first time. I can't stress how much I love COIN enough.  Chase, Ryan, and Joe are from Nashville, Tennessee. They have incredible energy and fresh music, with something for everyone. In your feels? Listen to " Malibu 1992 ." Have a crush on someone? Give " Talk Too Much " a try. Maybe it didn't go great with your crush? Definitely Listen to " Youuu ." A personal favorite that you should just listen to? " Growing Pains ." For your convenience, I've compiled another 30-minute playlist of all the COIN essential tracks, plus some standouts. Deep Dive on New Year's in Amsterdam: European Road Trip with EF Ultimate Break (Part 3)

It's finally time for Part 3 of my deep dive into my New Year's in Amsterdam: European Road Trip experience! In this post, I'll continue to give you an inside look at what my days were like to truly show the pace of the trip and the amount you're able to experience in such a short time. Since this trip was so action-packed, this blog will be posted in three parts and I can't wait to share everything!   To recap: EF Ultimate Break is a group travel company for young adults aged 18-35. They offer just over 100 different trips across six continents, so chances are that they have an itinerary fit for you.  On December 28th, I hopped on a plane and traveled solo with EF Ultimate Break across Europe for 17 days. The itinerary for my trip included London, Amsterdam, Paris, Lucerne/Swiss Alps, Venice, Florence, and Rome plus lunch stops at Lake Como and Orvieto in Italy. Music Monday: Del Water Gap & Maggie Rogers

Hi, y'all! Not too long ago, I took a quick trip to Houston with my boyfriend to see Del Water Gap and Maggie Rogers in concert. The two put on a great show, with Del Water Gap opening for Maggie. This was my third time seeing Del Water Gap live, and Holden (DWG himself) never disappoints. If you've never heard of him, this indie singer has great songs like " Ode to a Conversation Stuck in Your Throat " which he coins as "a song about monogamy" and " High Tops ."  This was my first time seeing Maggie Rogers in concert and I was able to hear all of my favorites, plus some songs I had never heard before. (If I'm being honest, I was already a fan of Maggie but we went to Houston for Holden!) Her music is more folksy, but still with an indie flair. " Love You For a Long Time " is a song that I listened to as I fell in love with my boyfriend and " Dog Years " is just amazing. If you have a few minutes, scan the Spotify code or c

Quick 10 Minute Fried Rice

Looking for a simple meal? Look no further. This one-pot fried rice came out amazing, and it was so easy to make! I used Minute Rice that I cooked in the microwave for added convenience and you wouldn't be able to tell if I didn't tell you. Other than buying some frozen veggies and soy sauce, everything you need to make this dish should be a pantry staple. Let's get into the details! Note: This recipe yields four servings, which is great for leftovers or to share! You can easily half this recipe if desired. Ingredients 2 tablespoons unsalted butter, cubed 2 teaspoons minced garlic 8 ounces frozen peas and carrots  3 ounces frozen onions  2 eggs, scrambled 4 cups of cooked rice (if you opt for Minute Rice, microwave 2 cups of rice with 2 cups of water and let sit for at least 5 minutes after cooking) 5-6 tablespoons soy sauce (or to taste) cracked pepper to taste (optional) Directions Step 1: Melt butter in a pot at medium-high heat, adding in the garlic.  Step 2: Add in
